Strawberry Banana Pudding

Ingredients
  

  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 3-4 ripe bananas
  • 1 pound fresh strawberries, stemmed and sliced
  • 1 package vanilla
  • 1 Fresh cream (homemade or store-bought) for topping

Instructions
 

  • Prepare the Custard
    Step 1: Mix the dry ingredients
    Mix together 1/2 cup sugar, 1/4 cup flour, and 1/4 teaspoon salt in a medium saucepan while it is off the stove
    Step 2: Add the milk for Strawberry Banana Pudding
    Slowly pour 2 cups of milk into the mixture, stirring until smooth and fully combined.
    Step 3: Cook over medium heat
    Place the saucepan on the stove over medium heat. Stir constantly until the mixture thickens and boils. Continue cooking and stirring for 2 more minutes.
    Step 4: Mix the eggs
    Gently beat 4 egg yolks in a small bowl. Remove about 1/2 cup of the hot milk mixture from the saucepan, stirring well into the egg bowl to prevent the eggs from cooking. Then, slowly pour the blended egg mixture back into the saucepan, stirring well.
    Step 5: Boil and cool
    Bring the mixture to a gentle boil for 2 minutes, stirring constantly. Then, turn off the heat and add 1 teaspoon vanilla extract. Pour the custard into the bowl, covering the surface directly with plastic wrap to prevent a film from forming. Cool to room temperature, then chill in the refrigerator until the cream is completely cool.
  • Assemble the Pudding
    Step 1: Layering for Strawberry Banana Pudding
    Spread a thin layer of custard in the bottom of a large glass or pudding bowl. Then, layer a layer of vanilla wafers, followed by a layer of bananas (3-4 ripe bananas, sliced) and strawberries (1 pound fresh strawberries, stemmed and sliced).
    Step 2: Repeat
    Continue layering custard, wafers, bananas, and strawberries until all ingredients are used, finishing with a layer of custard on top.
    Step 3: Refrigerate
    Cover and refrigerate the pudding for at least 4 hours or overnight to allow the flavors to meld and the wafers to become smooth.
