Thanks, it's quite a simple technique to do once you have practised for a while. You just use a large open star tube such as a 1M and start piping from the middle rather than the outside as you would to pipe a swirl. You can pratice on a piece of greaseproof paper with some cupcake sized circles drawn on it. That way you can re-use the buttercream and keep trying until you get it perfect! Having really creamy buttercream helps too :)

Hi Nicola,

Thanks, I seem to be getting a rep for making car cakes!! I don't recall what brand the alphabet cutters are, they come in a silver tin and make quite big letters that I find ideal for men's cakes and cakes where there is quite a bit of space on the board. I got them from my local kitchen shop so I will check next time I go in and see what the brand was.

Not the best weekend - we had Jess for 12 years so she has left a large doggy shaped hole in our lives :( Little Mr Ice Maiden is already asking for a puppy though!!!

Hi there,

Another brilliant cake. You really are fab at carved cakes. Can I be cheeky and ask a query - what cutters do you use for the lettering here? I've been searching for some like these but without success to date.

Hope you are ok? Sounds like you've had a bad weekend.

Wow, what a gorgeous alternative to a plain old wedding cake!

I'm a complete novice when it comes to decorating fairy cakes. How on eath do you do the rose piping effect?
