Baking Mania

When I decided to start a Blog on my site I promised myself that I would post at least once a week. Well it’s been 10 days since my last post so I’m afraid I have fallen at the first hurdle! I do however have a good excuse given the amount of baking I have done over the last 10 days.

This manic baking session all started with a phone call during February from a lovely lady at Dorset and Somerset Air Ambulance. They are celebrating their 10th birthday this year and Joanna wanted me to quote for a birthday cake to serve approximately 100. No problem I thought, we can do a great cupcake tower with a top tier featuring a model of their distinctive yellow helicopter. As the charity is one I like to support I offered to do the cake for ingredient costs only.

The DSAA were most appreciative of this and some weeks went by before I spoke to them again – the numbers had increased to 650! Wow, great, it was sounding like the party was going to be brilliant and, with a few tweaks to the cake plans, still perfectly acheivable. Final numbers were promised to me for the 21st of May.

Well, I was quite pleased that I was sitting down when I got that email – the final guest list totaled 1164!!!! Having had a panic, a sit down, a cup of tea and a good think I worked out a plan of action with the help of a couple of lovely friends. The interceding days have been spent in a frenzy of baking and all the cakes are waiting patiently in the freezer to be iced. I feel I am now in the eye of the storm with all the baking done and a decorating marathon approaching for Friday.

The final tally:

  • The main cake – a 4 Tier fruit cake – 200 portions
  • 450 Cupcakes with ‘10′ cake toppers
  • 150 portions of St Clements cake
  • 150 portions of carrott cake
  • 150 chocolate brownies
